Chocolate Cheesecake Truffles

You’re probably thinking OMG this must’ve been so difficult to make, as are many cheesecake recipes.

PLOT TWIST

These truffles consisted of 4, yes 4, FOUR, quatre, quattro, cuatro ingredients :O !!! And… they’re VEGAN!! How is this possible you ask?! Well keep reading to see this amazing and healthy recipe that I came across online (link at the bottom).


Here are the ingredients that you’ll need to make this amazing dessert

  • Raw cashews – 500 g
  • Honey – 2 tablespoons
  • Salt – around 1/8 tsp
  • Chocolate to melt

That’s it. That’s literally it. When I first read the recipe I thought it was a fluke. When I made them, I saw how a little can go a long way.

Step 1:

Soak the cashews in water overnight. This is vital, and if not done, they will not blend to the cheesecake texture.

Step 2:

Dry the cashews and put them in a food processor. Before you start to blend, add the honey and the salt. Blend this mixture until smooth. I actually took a photo while making these so this is how it should look like:

Step 3:

Once at this consistency, form them into balls. I will say that the mixture is sticky, and I’m not sure how to do this without getting your hands sticky, so if anyone has a trick, post in the comments!

Place the cheesecake balls onto some parchment paper on a baking sheet and place them in the freezer so that they take their shape and are easy to work with when it comes time to…

Step 4:

Dip them in chocolate! Take whatever chocolate you like (I used dark chocolate and a bit of milk chocolate) and melt them. Take out the cheesecake balls from the freezer and proceed to dip them in the chocolate.

This step got super messy for me as my hands got all chocolate-y and sticky from the cheesecake balls. Is there an easier way to dip anything into chocolate without making a huge mess and taking forever? Leave it in the comments below!

Step 5:

After you’ve dipped all of them, place them back on the parchment paper and the baking sheet and place them in the freezer so that the chocolate hardens faster! Once the chocolate hardens, these are ready to serve.

Voila! 4 ingredients, healthy, and succulent all at the same time! I hope you all enjoy this dessert as much as my mom did!
